Mango and Bean Taco

Who doesn't love to eat a rich and colorful Taco?  A taco filled with wholesome beans, lettuce, a touch of cream, cheese along with an added bonus of   tropical delightful mangoes will make this Mexican food even more scrumptious. First time i ever tried  Mexican food was in one of those popular chain of  Mexican fast foods. I should say that I hated it. I almost stopped eating Mexican food for years. Later, I rediscovered the richness of the aromatic spices used in Mexican food with a long desire to learn about this cuisine. I started trying good Mexican dine in eat outs and certainly, I fell in love with it. I wish I had done this before instead of eating out at fast foods.

Tacos require most of your time in assembling the food ingredients rather than cooking on your stove top. So make sure you keep all the items ready and avoid running to the store in the last minute. Yes, I have hands on experience in this. Alright, lets move on to the recipe.


Ingredients:

  • 1 cup black bean or red bean soaked overnight and cooked soft / 1 can black beans store bought.
  • chopped onion - 1/2 cup
  • chopped tomatoes - 1
  • Garlic - 1tsp minced
  • Red chilli powder - 1/2tsp
  • Cumin powder - 1/4tsp
  • store bought taco seasoning - 1tsp
For assembling:
  • Taco shells- 10
  • Cheddar shredded cheese - 1cup
  • Chopped tomatoes deseeded - 1 
  • shredded lettuce - 1cup
  • Mango chopped - 1cup
  • Sour cream 
  • avocado - chopped 1cup

Method
  • Heat canola oil in a pan. Saute chopped onions, tomatoes, minced garlic, Red chilli powder and cumin powder. Also add Taco seasoning and cooked drained black beans.
  • Cook for 5 minutes.
  • Now, Fill each taco shells with the cooked beans first and a tbsp of all the items in the assembling list. top it with a spoonful of sour cream and arrange the filled tacos in a baking try.
  • Bake the filled tacos for 375 degree F for 7 minutes.
  • Serve the tacos for an appetizer party or dinner for your loved ones. Enjoy the tacos with salsa.
