Udon Egg Noodles
This is my husband's favourite dish. Very simple, tasty and colorful dish :)
organic Japanese udon noodle 1 packet
sliced onion 1
carrot 1/2 cup
French cut beans 1/2cup
shredded cabbage 1/2cup
chopped scallions 3tbsp
Green bell pepper 1/2cup
egg 2
ginger garlic paste 1tbsp
soy sauce 1tbsp
Red chilli sauce 1-1/2tbsp
Ajinomoto 1/2tsp
freshly ground pepper 1/2tsp
olive oil 3tbsp
salt to taste
Method
- Cook the noodles with enough water as per the instructions on the packet with some salt and two drops of cooking oil.
- Drain the excess water and wash the noodles in cold running water in order to prevent from sticking together.
- Heat oil in a large pan or wok, fry ginger garlic paste and add sliced onions to it. Fry for a minute. Add carrot, beans, cabbage , bell pepper with salt to taste and fry well.
- Add eggs to it and cook well till the raw smell goes off. Add soy sauce, ajinomoto, red chilli sauce to it. Now stir in the cooked noodles and mix thoroughly. sprinkle pepper powder and scallions to it :)
