Penne pasta with veggies in cheesy garlic sauce

Pasta is a favourite food for many people. Frankly, i don't prefer pastas cooked in red tomato sauces. It tasted sour and had the raw tomato smell in it. Every time, when i cook pasta i get a Desi flavor which i really wanted to avoid as the originality of the dish went on missing. so this time, i decided to cook a low fat delicious pasta dish with few mediterranean herbs. I prepared a simple white sauce with garlic chives nicely simmered in butter, boiled milk & all purpose flour with melted parmesan cheese. cooked pasta and tossed up with sliced onions, zucchini and carrots. poured in the garlic sauce and mixed it with aromatic herbs and red chilli flakes.


For Garlic sauce
  • Butter 2tbsp
  • chopped garlic 5pods
  • all purpose flour 2tbsp
  • milk 1cup
  • Parmesan cheese 4tbsp
For Pasta preparation
  • Cooked pasta 1cup
  • sliced onions 2tbsp
  • zucchini 1 small (sliced thinly)
  • shredded carrot 1 small
  • spring onions 2tbsp
  • ginger garlic paste 1/2tsp
  • dry oregano powder 1tsp
  • dry basil leaves 1tsp
  • salt to taste
  • sugar a pinch
  • ground black pepper 1/2 tsp
  • butter 1tbsp
  • red chilli flakes 1tsp
  • Heat 2tbsp butter in a small pan. Be cautious not to scorch the butter. mix all purpose flour in milk without lumps. now, add this mixture to the butter in the pan. Also, add chopped garlic and simmer it for 5 minutes. keep stirring it so that no lumps are formed. Add parmesan cheese and allow it to melt. add sugar while boiling. put off the stove when you get a nice aroma of cooked garlic in the milk.
  • Cook the pasta in water with some salt as per the instructions on the packet.
  • Saute onions in heated butter with ginger garlic paste. Add zucchini and shredded carrot. You can even add half cooked broccolis and mushrooms. sprinkle little salt. saute it well.
  • Mix pasta into the cooked veggies and toss it well.
  • pour in the garlic sauce over the pasta mixture. sprinkle the dried oregano powder, basil leaves, ground black pepper and red chilli flakes.
  • Garnish it with spring onions.
