stuffed mixed vegetable paratha / stuffed indian flat bread with raitha
Apparently, the biggest task for me while making paratha is getting the round shape. I usually don't get perfect round shapes. But i agree that my husband gets the right shape. so, i usually take his help. parathas are often made with many different stuffing like aloo, gobi, paneer etc. It is made with wheat flour. The stuffing is prepared seperately and placed inside the dough with the sides sealed and rolled out into flat breads. stuffed parathas can be eaten with raitha and pickle.
Ingredients
For dough making
- wheat flour 3cups
- salt 1tsp
- warm water 1 1/2cup
- canola oil 1tbsp
For stuffing
- chopped carrot 1 no
- chopped beans 10 nos
- potato 1
- cauliflower shredded few florets
- chopped onion 1 medium size
- ginger garlic paste 1tsp
- green chillies 3 chopped
- cumin seeds 1tsp
- garam masala 1tsp
- coriander powder 1tbsp
- red chilli powder 1/2tsp
- coriander leaves few
- canola oil 2tbsp
- salt to taste
Method
making the stuffing
- Boil all the vegetables. drain the water. cool, peel and mash the potatoes along with the other vegetables.
- heat oil in a small pan. splutter cumin seeds. Fry onions along with ginger garlic paste, green chillies.
- Add garam masala, coriander powder and red chilli powder. saute well.
- Add the cooked vegetables, coriander leaves and salt to taste. mix well and fry for two minutes.
- put off the fire and set this mixture side.
preparing the parathas
- mix wheat flour, salt, 1tbsp oil with enough water and knead well to get soft dough.
- leave it to stand for about 10 to 15 minutes.
- divide the dough into 10 or 12 equal portions.
- take a portion and dust it with some wheat flour and roll it to about 8cm. place a spoonful of the stuffing in the centre of the rolled dough and seal by pulling all the sides together.
- Make a ball out of this and start rolling them into parathas. sprinkle some flour over the parathas while rolling in order to avoid sticking to the rolling pin.
- Heat a griddle with 1tsp of oil and cook the parathas on medium heat. flip it over to cook both the sides.
For cucumber raitha
- shredded cucumber 1/2cup
- shredded carrot 1/2cup
- coriander leaves few
- yoghurt 1cup
- salt to taste
- chat masala a pinch to sprinkle
Mix all the above ingredients and serve it with stuffed mixed vegetable parathas.
