Raw mango rice / mangai sadam

This is a must try recipe. i have heard people making this dish for telugu new year 'ugadi' festival. It is made out of raw unripened grated mango and this flavored rice has a rich spicy taste blended with a balanced hint of sweetness and tanginess of raw mango. leftover rice gives good result.

  • Grated raw mango 1cup
  • grated carrot 1 small size
  • cooked rice 2cups
  • Mustard 1tsp
  • cumin seeds 1tsp
  • channa dal 1tsp
  • urad dal 1tsp
  • red chillies 2
  • slit green chillies 2
  • turmeric powder 1/2tsp
  • asafoetida a pinch
  • curry leaves few
  • Roasted cashews 8
  • salt to taste
  • cooking oil 2tbsp
  • Heat oil in a pan and splutter mustards, cumin seeds, channa dal, urad dal and turmeric powder.
  • fry red and green chillies, curry leaves along with a pinch of asafoetida in it.
  • Add grated mango and carrot into the pan and fry till the raw smell goes off and the moisture from the mango disappears.
  • You can add required salt now.
  • Stir in the cooked rice and saute well. Mix properly so that the spices blend well with the cooked rice.
  • Garnish with roasted cashews and serve hot.
