vermicilli upma
Upma seems to be simple which is actually not. ha ha. The actual part lies in the addition of the required amount of water and the mixing of the vermicilli or sooji into the boiling water. both vermicilli and sooji has to be roasted slightly and added into the boiling water slowly and it has to be stirred well simultaneously.
Ingredients
- roasted vermicilli 2cups
- chopped onion 1
- chopped green chillies 2
- red chillies 2
- carrot 1 cup
- beans 10 nos
- green peas a handful
- ginger 1 inch
- mustard 1tsp
- cumin seeds 1tsp
- channa dal 1tsp
- urad dal 1tsp
- peanuts 2tbsp
- curry leaves few
- coriander leaves few
- turmeric powder a pinch
- canola oil 3tbsp
- water 5cups
- salt to taste
Method
- Heat a drop of oil in a kadai and roast the vermicilli in it. keep it aside.
- In the same kadai, heat 3 tbsp of oil and fry mustards, cumin seeds, channa dal, urad dal, peanuts, red chillies and curry leaves.
- Now, add onions, ginger, green chillies and a pinch of turmeric powder to it and fry well.
- Add all the vegetables and salt to taste. saute well.
- Now, pour 5 cups of water into the mixture and bring it to boil. and see to that the vegetables are cooked.
- when the water boils, add the roasted vermicilli slowly in one hand and keep stirring it gently with the other hand. cook till tthe vermicilli becomes soft and slimy.
- vermicilli upma is ready and now, garnish it with some coriander leaves.
