Sweet corn vegetable soup

Corn soups are widely popular all over the world. Many different soups are made out of corn in distinct styles. This is a more basic soup prepared out of vegetable stock. Generally, the vegetable stock for any soup is made with vegetables like carrot, cabbage, beans, celery, garlics, ginger, bay leaf, cinnamon, peppercorns. Chop all the vegetables and add these along with the herbs into a large pot of water. pour water such that the vegetables are immersed into the water completely. bring it to boil at a high temperature and then simmer it for about an hour. And then you can strain the stock. stock will appear as lightly colored, translucent liquid.


Vegetable stock
  • Carrot 2medium size
  • Beans 15nos
  • celery 2 stalks
  • cabbage 5 leaves
  • garlic 4pods
  • ginger 1 inch
  • black peppercorns 1o
  • bay leaf 1
  • cinnamon 1 inch

For the soup
  • sweet corn cream style 1 small tin
  • corn kernels 5-6 frozen
  • chopped carrot 4tbsp
  • chopped beans 4tbsp
  • shredded cabbage 2tbsp
  • spring onions 2tbsp
  • rice vinegar 1tbsp
  • soy sauce 1/2tbsp
  • pepper powder 1tbsp
  • salt to taste
  • vegetable stock 3 cups
  • corn flour diluted in water 3tbsp

  • Prepare stock as mentioned above the ingredients. Take 3 cups of vegetable stock and add chopped vegetables, sweet corn cream style and mix it well.
  • Place it on the stove and bring it to boil. A white layer of foam is formed while boiling which can be removed.
  • Add rice vinegar and soy sauce to it. Adjust the consistency of the soup with corn flour diluted in water. you can add about 2 -3tbsp of corn flour liquid. Add ground pepper and salt to taste.
  • serve it hot with spring onions.
