soya chunks curry


soya chunks contain a huge amount of protein. It is also a major substitute for meat in most of the vegetarian diets. All these days, i eat a lot of veggies and there is only a very minimum intake of meat in my diet. cooking meat for one person at home is a real boring task. So i decided to make soya curry. Soya chunks are very tasty when cooked along with curry powders. It becomes tender, juicy and fluffy when cooked in thick gravy.


Ingredients A, B & C

A) To fry in oil and grind
  • Fennel seeds 1tsp
  • cinnamon 1 inch
  • chopped onion 2 nos medium size
  • chopped tomatoes 2 nos small
  • garlic 5 pods
  • ginger 1 inch
  • coriander powder 2tbsp
  • Red chilli powder 1tbsp
  • green chilli 1
  • canola oil 3tbsp

B) To fry in oil and grind
  • shredded coconut 3tbsp
for tempering and gravy
  • soya chunks 1cup
  • curry leaves few
  • mustard 1tsp
  • ingredients A & B
  • salt to taste

Method
  • put soya chunks in boiling water with salt for about 1o minutes. drain the water and set the soya chunks aside.
  • heat 2tbsp of oil and saute ingredients 'A' in it and grind it in a mixer. keep this aside.
  • heat 2 drops of oil and saute ingredient 'B' in it and just grind this into a fine thick paste with little water.
  • heat oil in a kadai and saute mustards, curry leaves and ground masala paste.
  • Add soya chunks into it. Add salt and 2 cups of water. allow the gravy to boil for 10minutes. Then add ground coconut paste to it and allow it to boil for another 5 minutes.
  • When the gravy has reduced in quantity, put off the stove and serve it with rice or chapathi.
